2/3 cup granulated sugar

1/4 teaspoon salt

1/2 teaspoon pure vanilla extract

2 large egg yolks (optional, for extra creaminess)

Ground cinnamon, for garnish

Rinse the Rice: Start by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch and helps achieve a creamier texture.

    Prepare the Milk Mixture: In a large saucepan, combine whole milk, heavy cream, sugar, salt, and the vanilla bean pod along with its scraped seeds. Stir the mixture gently to dissolve the sugar.

      Cook the Rice: Bring the milk mixture to a gentle boil over medium heat. Once boiling, add the rinsed rice. Stir briefly to prevent sticking. Reduce the heat to low and let it simmer, uncovered, for about 30-35 minutes, stirring occasionally to ensure it doesn’t stick to the bottom of the pot.
