4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (optional)

1/2 cup sour cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
