Watermelon Lemonade Pops

4 cups of seedless watermelon, cubed

1 cup of freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup of honey or maple syrup (adjust based on sweetness preference)

1 cup of cold water

Zest of 2 lemons

Optional: mint leaves for garnish

Prepare the Watermelon: Start by cutting the watermelon into small cubes. Place them in a blender and blend until smooth. If desired, strain the mixture through a fine mesh sieve to remove pulp for a smoother texture, but this step is optional.

    Combine Ingredients: In a large bowl, combine the fresh watermelon juice, lemon juice, honey or maple syrup, cold water, and lemon zest. Stir well to ensure the sweetener dissolves completely.

      Taste Test: Before pouring into molds, taste the mixture. You can adjust sweetness by adding more honey or lemon juice if needed to achieve your preferred flavor.

        Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

          Insert Sticks: If using popsicle sticks, place them in the center of each mold. If your molds don’t come with lids, you can cover them with aluminum foil to hold the sticks in place.

            Freeze: Place the molds in the freezer. Allow them to freeze for at least 4-6 hours or until solid.

              Unmold the Pops: To remove the pops, run warm water over the outside of the molds for a few seconds, then gently pull the pops out.
