Watermelon Mint Feta Skewers

Ingredients
  

1 small seedless watermelon

200g feta cheese, cubed

1 cup fresh mint leaves

1 tablespoon balsamic glaze (optional)

Freshly cracked black pepper (to taste)

Skewers (8-10 inches long, wooden or metal)

Instructions
 

Prepare the Watermelon:

    Cut the watermelon into 1-inch cubes. Ensure that you remove any seeds if using a watermelon that has them. Pat the cubes dry with a paper towel to prevent excess moisture.

      Cube the Feta:

        Cut the feta cheese into similar-sized cubes (about 1 inch) so they can balance well with the watermelon.

          Assemble the Skewers:

            Take a skewer and carefully thread a piece of watermelon, followed by a mint leaf (folded if large), and then a cube of feta. Repeat this pattern until the skewer is filled, leaving a little space at the end for easy handling. You can do around 3-5 sets per skewer depending on the skewer's length and your preference.

              Drizzle with Balsamic Glaze:

                Once all the skewers are prepared, if desired, drizzle a small amount of balsamic glaze over them for added flavor. This will also enhance the presentation!

                  Season:

                    Sprinkle freshly cracked black pepper over the assembled skewers for an extra zing of flavor.

                      Chill and Serve:

                        For the best taste, allow the skewers to chill in the refrigerator for at least 15-30 minutes before serving. This will not only enhance the freshness but also meld the flavors together. Serve them cold on a platter for a refreshing appetizer or snack!
