4 cups of seedless watermelon, cubed

2 tablespoons of lime juice (freshly squeezed)

1 teaspoon of Tajín seasoning (plus extra for serving)

Optional: fresh mint leaves for garnish

Instructions
 

Prepare the Watermelon: Start by cutting the watermelon into small cubes. Make sure to remove any seeds if you find them.

    Blend the Mixture: In a blender, combine the cubed watermelon, lime juice, and 1 teaspoon of Tajín seasoning. Blend until smooth and well combined.

      Strain (Optional): If you prefer a smoother texture, you can strain the mixture through a fine mesh sieve to remove any pulp, but this step is optional.

        Pour into Molds: Carefully pour the watermelon mixture into popsicle molds, filling them about three-quarters full to allow space for expansion as they freeze.

          Insert Sticks: Place a wooden popsicle stick into the center of each mold. Ensure the stick stands upright and is centered in each pop.

            Freeze: Place the molds in the freezer for at least 4-6 hours or until completely frozen.

              Serve: Once frozen, remove the pops from the molds by running them briefly under warm water to loosen. Sprinkle a little extra Tajín on top for an added kick if desired.
