2 cups fresh watermelon, cubed

1 lb sushi-grade salmon, diced

1 cup cucumber, thinly sliced

1/2 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup fresh cilantro leaves, chopped

2 tablespoons sesame seeds (toasted)

Juice of 1 lime

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon sesame oil

Salt and pepper to taste

Prepare the Dressing: In a small bowl, whisk together lime juice, soy sauce, honey, sesame oil, salt, and pepper. Adjust seasoning to taste and set aside.
