1 cup smooth peanut butter

1 large onion, diced

3 cloves garlic, minced

1-inch piece of ginger, grated

2 medium sweet potatoes, peeled and diced

2 medium carrots, sliced

1 red bell pepper, chopped

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 can (15 oz) chickpeas, drained and rinsed

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 tablespoons vegetable oil

Fresh spinach or kale, for garnish

Fresh cilantro, chopped, for garnish

Cooked rice or quinoa, for serving

Instructions
 

Sauté the Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Add the garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Prepare the Veggies: Add the sweet potatoes, carrots, and red bell pepper to the pot. Stir and let them cook for about 5-7 minutes, until they start to soften.
