Zesty Chicken Enchilada Flatbread

2 large flatbreads (whole wheat or traditional)

1 cup cooked shredded chicken (rotisserie chicken works great)

1 cup enchilada sauce (red or green, your choice)

1 cup black beans (drained and rinsed)

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

½ cup diced red onion

1/2 cup sliced black olives

1 avocado, sliced

2 tablespoons fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Sour cream (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Chicken Mixture: In a large mixing bowl, combine the shredded chicken, black beans, corn, half of the enchilada sauce, cumin, chili powder, salt, and pepper. Mix well until all ingredients are coated.

      Assemble Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Spread the remaining enchilada sauce evenly over each flatbread.

        Add Chicken Mixture: Spoon the chicken mixture generously over each flatbread, leaving about a half-inch border around the edges.

          Top with Cheese and Veggies: Sprinkle the shredded cheddar cheese over the top of the chicken mixture. Evenly distribute the diced red onion and sliced black olives across the flatbreads.

            Bake: Drizzle a little olive oil over the top of the flatbreads. Place the baking sheet in the preheated oven and bake for about 15-20 minutes or until the cheese is bubbly and lightly golden.

              Garnish and Serve: Remove from the oven and let cool for a couple of minutes. Top with avocado slices and fresh cilantro before slicing into wedges.
