1 cup long-grain white rice

2 cups vegetable broth (or water)

1/4 cup fresh cilantro, chopped

Juice and zest of 1 large lime

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can (15 oz) black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup corn (fresh, frozen, or canned)

Optional toppings: sliced jalapeños, crumbled feta cheese, sour cream, or tortilla strips

Instructions
 

Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.

    Prepare the Flavored Rice: Once the rice is cooked, remove it from heat. In a small bowl, mix together the olive oil, minced garlic, lime juice, lime zest, cumin, salt, and pepper. Pour this mixture over the warm rice and fluff it with a fork, gently incorporating the flavors.
