2 cups fresh corn kernels (about 3-4 ears of corn, or 1 can of corn, drained)

1 ripe avocado, diced

1 medium red onion, finely chopped

1 small jalapeño, finely diced (remove seeds for less heat)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1/2 teaspoon cumin

Salt and pepper, to taste

If using fresh corn, remove the kernels from the cobs by standing an ear vertically and cutting downwards. For convenience, you can also use canned corn — just make sure to drain and rinse it.

    In a large mixing bowl, combine the corn kernels, diced avocado, chopped red onion, diced jalapeño, and halved cherry tomatoes.

      Add the chopped cilantro, lime juice, and cumin to the bowl. Gently mix all the ingredients together until well combined.

        Season with salt and pepper to taste. You can adjust the seasonings according to your preference — add more lime juice for extra zest or more jalapeño for heat!

          Let the salsa sit for about 10-15 minutes at room temperature to allow the flavors to meld together.
