Zesty Greek Chicken Pita Pockets

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

1 lemon (juice and zest)

Salt and pepper to taste

4 whole wheat pita pockets

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup red onion, thinly sliced

1 cup crumbled feta cheese

½ cup Kalamata olives, pitted and sliced

½ cup Greek yogurt

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon red wine vinegar

Marinate the Chicken: In a bowl, mix together olive oil, dried oregano, garlic powder, paprika, lemon juice, lemon zest, salt, and pepper. Add the chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.

    Cook the Chicken: Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for 5 minutes before slicing into strips.
