Ingredients

4 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, grated

1/2 cup green onions, thinly sliced

1/4 cup fresh dill, chopped

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1 tablespoon honey

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, and sliced green onions. Toss gently to mix.

Make the Dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, lemon zest, Dijon mustard, and honey until smooth and well-combined.

Combine Coleslaw and Dressing: Pour the dressing over the mixed vegetables. Sprinkle the fresh dill on top and season with salt and pepper to taste. Gently toss the slaw until all the vegetables are evenly coated with the dressing.

Chill: Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld and the vegetables to soften slightly.

Serve: Stir the coleslaw again before serving to refresh it. Adjust seasoning if needed and garnish with additional dill or lemon wedges if desired.
