1 French baguette, sliced into 1/2-inch thick pieces

2 cups cherry tomatoes, diced

1 medium cucumber, peeled and diced

3 cloves garlic, minced

1/4 cup fresh basil, chiffonade

1/4 cup fresh parsley, chopped

2 tablespoons balsamic vinegar

2 tablespoons extra virgin olive oil

1 teaspoon lemon juice

Salt and pepper to taste

Optional: crumbled feta cheese for topping
