Zucchini Basil Pesto Pasta

2 medium zucchinis, spiralized or diced

1 cup fresh basil leaves

1/2 cup pine nuts (lightly toasted)

1/2 cup grated Parmesan cheese

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

12 oz pasta (your choice, preferably whole grain or gluten-free)

Juice of 1 lemon

Optional: Cherry tomatoes for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the noodles, then set the pasta aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, grated Parmesan cheese, minced garlic, and lemon juice. Pulse until coarsely chopped.

      Emulsify: While the food processor is running, slowly drizzle in the olive oil until the mixture is well combined and smooth. If the pesto is too thick, add a little of the reserved pasta water to reach the desired consistency. Season with salt and pepper to taste.

        Combine: In a large mixing bowl, toss the cooked pasta with the zucchini. Add in the basil pesto, combining everything until the pasta is evenly coated. If the pasta seems dry, add more reserved pasta water as needed.

          Serve: Plate the pasta, garnishing with halved cherry tomatoes and an extra sprinkle of Parmesan cheese if desired. Enjoy this fresh and vibrant dish warm or at room temperature!
