1 large zucchini, thinly sliced

1 tablespoon olive oil

Salt and black pepper, to taste

1 teaspoon dried oregano

1 teaspoon garlic powder

1 pre-made flatbread (store-bought or homemade)

1/2 cup crumbled feta cheese

1/4 cup cherry tomatoes, halved

1 tablespoon fresh basil, chopped (optional for garnish)

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Oven: Set your oven to 400°F (200°C) for baking the flatbread.

    Prep the Zucchini: In a bowl, mix the thinly sliced zucchini with olive oil, salt, black pepper, dried oregano, and garlic powder. Toss until the zucchini is well coated.

      Roast the Zucchini: Spread the zucchini slices on a baking sheet lined with parchment paper. Roast in the preheated oven for about 10-12 minutes, or until they are tender and slightly golden. Remove from the oven and let cool slightly.

        Assemble the Flatbread: Place the flatbread on a serving pan. Evenly distribute the roasted zucchini slices over the flatbread.

          Add Feta and Tomatoes: Sprinkle the crumbled feta cheese and halved cherry tomatoes on top of the zucchini.

            Bake the Flatbread: Return the assembled flatbread to the oven and bake for an additional 8-10 minutes, or until the edges are crispy and the cheese is slightly melted.
