2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 large egg

2 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

Olive oil, for frying

For the Garlic Dip:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon fresh lemon juice

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel, gather the towel edges, and squeeze out the excess moisture. This step is crucial to prevent soggy fritters.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, salt, flour, grated Parmesan cheese, egg, green onions, minced garlic, black pepper, and paprika. Stir until the mixture is well combined and forms a thick batter.

      Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. You can check if the oil is hot enough by dropping a small spoonful of the batter into it; if it sizzles, the oil is ready.

        Fry the Fritters: Using a tablespoon, drop portions of the zucchini mixture into the skillet, flattening slightly with the back of the spoon. Fry in batches, making sure not to overcrowd the pan. Cook each fritter for about 3-4 minutes on each side, until golden brown and crispy. Remove and place on paper towels to drain excess oil.
