2 large zucchinis

1 cup shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1/2 cup sliced jalapeños (fresh or pickled)

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Cooking spray or olive oil for greasing

Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    Prepare Zucchini: Slice the zucchinis lengthwise into about 1/4-inch thick planks. Use a spoon to scoop out some of the flesh to create a small well for the toppings.

      Season Zucchini: In a small bowl, mix olive oil, chili powder, garlic powder, cumin, salt, and pepper. Brush or spray both sides of the zucchini slices with the seasoning mixture.

        Bake Zucchini: Lay the zucchini planks on the prepared baking sheet in a single layer. Bake for about 15-20 minutes, or until they start to soften and slightly char.

          Add Toppings: Remove the baking sheet from the oven. Slightly overlap the zucchini planks in rows to create a nacho base. Evenly distribute the black beans, cherry tomatoes, jalapeños, and red onions over the zucchini.

            Melt Cheese: Top the loaded zucchini nachos with shredded cheddar cheese. Return to the oven and bake for another 10 minutes, or until the cheese is bubbly and golden.
