3 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini), drained

½ cup fresh basil leaves, roughly torn

2 tablespoons extra-virgin olive oil

1 tablespoon balsamic glaze (or balsamic vinegar)

Salt and pepper to taste

1 tablespoon pine nuts (optional, for garnish)

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Place the noodles in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to draw out moisture.

    Prep the Caprese Ingredients: While the zucchini noodles are resting, halve the cherry tomatoes and drain the mozzarella balls. Roughly tear the basil leaves into smaller pieces.

      Combine the Ingredients: In a large mixing bowl, combine the zucchini noodles, halved cherry tomatoes, mozzarella balls, and torn basil leaves.
