2 large zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, chopped

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder (or 2 cloves of minced garlic)

Salt and pepper to taste

Optional: crushed red pepper flakes for a bit of heat

Prepare the Zucchini Noodles: Spiralize the zucchinis using a spiralizer. If you don’t have one, you can use a vegetable peeler to create long strips. Place the noodles in a colander, sprinkle with a small amount of salt, and let them sit for about 15-20 minutes to release excess moisture.

    Dress the Salad: In a large bowl, whisk together the olive oil, balsamic vinegar, garlic powder (or minced garlic), and a pinch of salt and pepper. If you like a little heat, add some crushed red pepper flakes to the dressing.

      Combine the Ingredients: After the zucchini has drained, pat them dry with paper towels. Add the zucchini noodles to the bowl with the dressing. Toss until the noodles are well coated.

        Add the Fresh Ingredients: Gently fold in the cherry tomatoes, mozzarella balls, and chopped basil. Be careful not to break the mozzarella too much.
