Ingredients

20 large pasta shells

2 medium zucchinis, grated

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 garlic clove, minced

1 cup marinara sauce (store-bought or homemade)

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, chopped (for garnish)

Olive oil for sautéing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

Sauté Zucchini: In a large skillet, heat a drizzle of olive oil over medium heat. Add the grated zucchini and minced garlic, sautéing for about 5 minutes until the zucchini is soft and most of the moisture has evaporated. Season with salt, pepper, and Italian seasoning. Remove from heat and let it cool slightly.

Prepare the Filling: In a mixing bowl, combine the sautéed zucchini, ricotta cheese, mozzarella cheese, and half of the Parmesan cheese. Stir until well blended. Taste and adjust seasoning with additional salt and pepper if needed.

Fill the Shells: Spoon the zucchini and cheese mixture into each cooked pasta shell. Be generous!

Assemble the Dish: Spread a layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the filled shells, and sprinkle the remaining mozzarella and Parmesan cheese on top.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove from the oven and let cool for 5 minutes. Garnish with fresh basil before serving. Enjoy your delicious zucchini parmesan stuffed shells!
