Ingredients

2 medium zucchinis, sliced into half-moons

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 cup broccoli florets

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece of ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil (or olive oil)

1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

1 tablespoon sesame seeds (for garnish)

Fresh cilantro or green onions, chopped (for garnish)

Salt and pepper, to taste

Instructions

Prep the Vegetables: Start by washing and slicing all of your vegetables. This makes the cooking process quicker and ensures everything cooks evenly.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until it's shimmering.

Add Aromatics: Add the minced garlic and grated ginger to the pan. Sauté for about 30 seconds until fragrant, being careful not to let them burn.

Stir-Fry the Vegetables: Add the zucchini, bell peppers, broccoli, and snap peas. Stir-fry for 5-7 minutes, or until the vegetables are just tender but still vibrant and crunchy.

Season the Stir Fry: Pour in the soy sauce and sesame oil, stirring well to coat all the vegetables. Taste and adjust seasoning with salt and pepper as needed.

Thicken Sauce (if desired): If you like a thicker sauce, stir in the cornstarch mixture and cook for another minute until it thickens slightly.

Serve: Remove the skillet from the heat and transfer the stir fry to a serving dish. Garnish with sesame seeds and fresh herbs like cilantro or chopped green onions.

Enjoy: Serve immediately over your choice of rice, quinoa, or even noodles for a wholesome meal.
