Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 cups whole milk

1/2 cup heavy cream

4 tablespoons unsalted butter

1/4 cup all-purpose flour

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (panko preferred)

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour, stirring continuously for about 2 minutes until golden and bubbly.

Add Dairy: Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue cooking while stirring until the mixture thickens, about 5-7 minutes.

Flavor It Up: Stir in the Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Remove from heat and add the shredded cheddar and mozzarella cheeses, stirring until melted and creamy.

Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce, ensuring all pasta is well coated.

Prepare for Baking: Transfer the macaroni mixture into a buttered 9x13 inch baking dish, spreading it evenly.

Create the Topping: In a small bowl, combine the breadcrumbs with the grated Parmesan cheese. Sprinkle this mixture evenly over the macaroni.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden and crispy.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
