4 cups chicken broth

1 cup water

2 tablespoons soy sauce

1 tablespoon miso paste (white or red)

2 tablespoons chili paste (such as sambal oelek or gochujang)

1 tablespoon sesame oil

1 tablespoon vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

2 green onions, sliced (plus more for garnish)

1 cup baby spinach

2 soft-boiled eggs (optional)

1 tablespoon sesame seeds (for garnish)

1 teaspoon crushed red pepper flakes (optional, for extra heat)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, miso paste, and a dash of pepper. Let it marinate for at least 20 minutes.

    Prepare the Broth: In a large pot, heat vegetable oil over medium heat. Add the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
