1 cup plain Greek yogurt

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/4 teaspoon vanilla extract

1/2 cup rolled oats

1/4 cup chopped dark chocolate or cacao nibs

1/4 cup shredded coconut (unsweetened)

1/2 teaspoon cinnamon

A pinch of salt

Instructions
 

In a mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and creamy.

    Add in the rolled oats, chopped dark chocolate (or cacao nibs), shredded coconut, cinnamon, and a pinch of salt. Mix until all the ingredients are evenly incorporated.

      Line a baking sheet with parchment paper. Using a spoon or a cookie scoop, portion out the mixture onto the prepared sheet, forming disk shapes (about 1-2 inches in diameter).

        Flatten each disk gently with the back of the spoon to make them more uniform in shape.

          Place the baking sheet in the freezer and freeze for about 2-3 hours or until the disks are solid.

            Once fully frozen, transfer the energy disks to a sealed container or a zip-top bag, and store them in the freezer for up to 3 months.

              Whenever you need a quick snack, grab a disk from the freezer and enjoy!
