Frozen Yogurt Strawberry Kiwi Pops

Ingredients
  

2 cups Greek yogurt (plain or vanilla)

1 ripe banana, mashed

1 cup fresh strawberries, hulled and chopped

1 cup fresh kiwi, peeled and diced

2-3 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Fruit: Start by washing and preparing your strawberries and kiwi. Chop them into small pieces and set aside.

    Make the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, mashed banana, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well combined.

      Layer the Pops: In your popsicle molds, start by spooning in a layer of the yogurt mixture (about a third of the way full). Next, add a layer of chopped strawberries and then a layer of diced kiwi. Repeat the layers until the molds are almost full, leaving a little space at the top for expansion.

        Insert Sticks: Once the molds are filled, gently press in popsicle sticks. If the mixture is too thick to hold the stick upright, freeze the molds for about 30 minutes before inserting the sticks.

          Freeze: Place the filled molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

            Unmold and Serve: To remove the pops, run the molds under warm water for a few seconds. Carefully pull out the popsicles. If desired, garnish with fresh mint leaves before serving.
