2 ripe bananas, mashed

1 cup natural peanut butter (smooth or crunchy)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper for easier removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Add Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, stirring until fully combined.

        Incorporate Mix-ins: If using, fold in the dark chocolate chips and/or chopped nuts into the oat batter for added texture and flavor.

          Transfer to Pan: Pour the mixture into the prepared baking pan, spreading it evenly with a spatula.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

              Cool and Cut: Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper. Allow to cool completely on a wire rack before cutting them into squares or bars.

                Store: Once cooled, store in an airtight container for up to a week at room temperature, or longer in the fridge.
